They liked to eat stews--boiled meat and potatoes with cabbage, turnips, beets, carrots, and parsnips. They also brought their love for crackers and dried codfish. Apple seeds from the Northeast were the basis of many hearty varieties of apples grown in Illinois. | They preferred to boil foods separately. Sometimes meat, primarily pork, was boiled down to a gravy. Favorite vegetables were sweet potatoes, turnips, and peas. Cornmeal was heavily used for cornbread, hoecakes, hominy, and grits. |
